Cooking Blunders: Part 2-
When I got married I was 24 years old, and I wanted to make my new husband a really special meal. I was making marinated swordfish cabobs. I bought $30 worth of seafood, and spent hours prepping, and marinating for the dinner. I made risotto (first time). Well, to say the least, the seafood’s quality wasn’t good. I tried to push the cook time on the risotto…my husband didn’t even get a bite. After my first bite, the seafood tasted fishy and the risotto was hard and tasteless. I took both plates, and threw the food into the garbage. Smartly, my husband didn’t protest. I was young and disappointed to go to so much time and cost to make a bad meal. We went out! Chalk it up to experience.
Another blunder involved not reading the directions in full before starting the cook time (I’m known for this one- that’s why I love seafood, it doesn’t cook for hours!). If a meat has to low-temperature cook for 2-3 hours, upping the temperature and cooking quicker gives you brontosaurus meat suitable for tires on your car! Chewy! You can have chewy meat, or eat at 9pm, which isn’t practical with small children.

1/2 cup non fat yogurt, 1/4 cup non fat cottage cheese (80 cal)

Lunch-
4 oz. Shrimp (120 cal)
Salad- 2 cups romaine, 4 cherry tomatoes,2 tablespoons black beans, cucumber, zucchini (105 cal.)
P.M. Snack-
2 pieces whole wheat bread, 3 oz sliced, low sodium turkey, 1 tbls honey mustard- open faced (160 cal)
Dinner-
1 cup brown rice chicken curry soup ( homemade) (270 cal)
Salad, 1 cup romaine, carotts, 4 cherry tomato, balsamic vinegar, and EVOO(110 cal)
8 grilled spears asparagus, zucchini, mushrooms (120 cal )
Dessert-
1 non fat chocolate pudding (60 cal)
